Seitan is a food made from wheat gluten. It is made by washing dough until all the starch is removed, leaving a sticky insoluble elastic mass, which is then cooked before being eaten. In this place, we worship its glutinous presence in the life of vegetarians, Asians and otherwise interested folks.
