I normally bake sweet potatoes in the oven just like a baked potato or I cut them into wedges or fries and add spices (cumin, paprika, etc). I'm wondering what other foods would be a good pairing. The only things I've paired with sweet potato are rice, avocado, roasted chickpeas, and vegetarian chicken nuggets (I'm vegetarian).
Been struggling this week and sweet potato is one of my go-to safe foods, but I want to eat more than just sweet potato lol.
Omg Iām about to bring back sweet potato lunch! Microwave a sweet potato, cut in half. Top one half with salsa beans (canned black beans cooked with salsa) and the other half with cinnamon sugar. I also like nut butter, dried rosemary with salt, and goat cheese with honey or maple syrup. If you havenāt tried sweet potato toasts I highly recommend those too- I cook mine in the air fryer and theyāre delicious with any of the toppings I mentioned.
Edit: I also like cubed sweet potatoes air fried then tossed in taco seasoning on top of a ātaco saladā (lots of lettuce, tomatoes, sprinkle of cheese, crushed crunchy taco shell, light Ortega sauce as dressing, salsa beans if I have them)
