I've been making kimchi with general success for some years, but I think I've been allowing it to sit too long at room temperature. From reading here, it appears that ideally 2-4 days seems to be how long it should sit out, then it can be transferred to the fridge. Is that about right?
Is there any thoughts on how long it will/should last once moved to the fridge?
