How do I replace my meal prep?

I'm going to be starting keto again for the first time in 7 years and am looking for a way to replace my current meal prep. I do this because it's the easiest way for me, and I can be accurate with my calorie / macro count. My current method:

Giant stock pot, put some water in, fill with chicken breast. Slow cook for 4-5 hours, then break up into shredded chicken in the same pot. Add pack of mixed veggies, and pack of frozen broccoli, let cook. Add 2 packages noodles that cook in the water, when they are 1/2 way done, I add a whole head of cabbage. Everything is cooked I evenly distribute it into 20 meal prep containers. This gives me food for 5 days (4 packs a day) 2 protein shakes a day. I just literally eat the same thing every day with different hot sauces on top. This comes out to exactly 1,525 calories per 4 containers (1 day). Add in the protein shakes and I'm at 1,800 calories exactly which is a 500 calorie deficit to cut with.

How can I do roughly the same thing with keto? Adding that many mixed veggies would be too many carbs because they have peas and carrots etc. And obviously noodles are out. Without those 2 things, that's 1/2 the bulk of the food gone, which is already a small amount of food. What can I do here without just replacing the veggies and noodles with butter or oil or something?

So you're saying you want to something OTHER THAN replace the noodles and starchy veggies, but you still want soup?
