New to Keto/ familiar with fasting

Hi everyone, I just wanted to hop on here and ask a few questions. First, information that might be useful about me. I'm a 33 year old Male, 5'10" work construction and started keto a week ago @ 203 lbs. My daily eating habits were horrible before I began, I would kick the day off at 5am with a giant sugar filled monster (those big green bastards) and not eat food until around 3pm but the food I ate was absolute garbage. My meals consisted of what ever was easiest and unfortunately that was a lot of fast food (burgers/fries/soda/CARBS) and I had a hard time just not eating, almost like I didn't feel full. I have since switched over to a much lower carb intake, I drink more water (still not where I need to be on water intake) and eat mostly home cooked foods (Cod/Steak/Chicken) and the occasional fast food burger with no bun around 4 carbs which I can only assume are coming from the ketchup. I've been trying to keep my carb intake as close to 0 as possible (I have maxed at about 11g in one day) and have dropped the water weight down to 192 Lbs. I have been keeping track of ketones with urine strips just to monitor the first few weeks before I get adjusted and to make sure I'm actually going into ketosis.

Question time - On average I fast for about 20hrs (Dinner to next meal I drink 30 calories max) each day, I have never been a breakfast person. I have been noticing some irritability and I have a much harder time putting up with stupid shit that before I could have just brushed off no problem. Is this normal? Also I don't really know if I should break the fast earlier in the day or not, at what point do those of you who fast choose to break it and are there particular reasons or is that just the time period you've set? I still need to up my caloric intake but I don't feel hungry after eating meals so I'm not sure. I appreciate everyone who reads this and any insight on this.
