This was my dinner for the last 2 nights. The great thing about recipes like this is that they can be easily tweaked based on your preferences. Try it with pork chops or chicken broth in place of the thighs and vinegar, for example.
Anyway, I seared salted-and-peppered boneless, skinless chicken thighs in olive oil until they were crisp on both sides but not cooked all the way through, then moved them to a plate. I deglazed the pan with red wine vinegar (which made my apartment smell like a straight up vinegar factory, but thankfully it doesn't linger) and added a dollop of dijon and a healthy splash of heavy cream. I added the thighs back to the pan to allow them to finish cooking in the sauce. I reduced the sauce until it was thick enough to coat a spoon and then added a bit of parsley, thyme, and s p to taste.
I served on a bed of sautéed dino kale, my favorite green. The picture has one tiny scrap of kale in it because I didn't think to post it here until after I was done eating. :)
The sauce is so pleasantly tangy, and it cuts the fattiness really nicely. Happy trails in the kitchen, y'all.
