What do you eat when you break your fast?

Hi! So this is my second day doing a 16:8 fast and was wondering how some of you guys break your fast. I haven’t had any issues other then getting a crash after having my first meal. I’m assuming this may be from a huge insulin spike from the size and components of my first meal and that I should possibly ease in with something light? Wanted some input on this... thanks!
