[Novice] I used to lift 5 years ago and finally am picking it up again. How do I know what is a safe weight to start at?

Hey guys, first time poster. I used to lift about 5 years ago. Then I was 164lbs 5'9'' and 18. I used to bench 160, and curl about 35, I don't remember trying squatting because I was scared but I am more than willing to learn now. I blew up to 210 in that time and am now at 185 and doing free weights stuff with 25lb dumbbells. Every time I try to lift again I over do it and am way too sore to continue on a consistent basis.

So stats now: 22 yrs, 185lbs, 5'10''

I'm not at all scrawny I still have a lot of dense muscle from forever ago. What do you guys recommend I do to avoid getting that novice soreness that makes you not want to lift again the next day?

Is there a starting weight I should try to start with bench, squat, and deadlift based on my size?

What do I eat in order to avoid the soreness after lifting and feeling sluggish before lifting?

Any advice for a dude just coming back and wanting lift and gain it again is much appreciated. Even if it's just links to good resources.

By the way I've been on a cutting diet of lots of veggies and lean protein so I've got to increase my intake if I start trying to gain again and I am well aware of that.
