How do you have discipline to stay away from sweets?

SW 210 April 2023 CW 165-168 GW 120 I'm 5'2

I workout 6 times a week and I do eat fairly clean but I'm addicted to sugar.

I always want sweets . How does everyone stop at one 😅 If I have a donut I want 3 , if I eat a chocolate bar I want more it's constant battle of staying away and failing or indulging and going overboard..

How do you find the balance ? I know it's what's stalling my weighloss journey. I'm either down 2-3 pounds then back up 3-5 😒 I've tried not buying it but I always end up buying things I can portion it out and I never do.
