Here’s an interesting development, sort of a good news/bad news thing: one of my partners is a trained bladesmith. Mostly making swords, fantasy and medieval weapons and combat/camping knives.
We were chatting today and I was asking what he knew of the current crop of chef knives out. He told me he’s been working on a line of kitchen knives and was going to ask me to be his R&D tester!
He even wants me to draw blades for him to forge. This could be fun!
My question here is, If you could design a, let’s say gyuto, what sort of specs, dimensions-wise including grinds, would you design?
Unfortunately, he’s not a fan of Damascus and “trendy” stuff like that. He’s old school. I’m workin on him!
