To hone or not to hone?

Hi y’all,

I’m a very novice knife wielder (cook by trade, just getting into learning more about knives) and I was wondering about the honing rod debate. I’ve just gotten my own sharpening stone and I’m trying to figure out my blade care/management routine.

Obviously most people use honing rods and are sure in their effectiveness, but I’ve also heard that if you have a sharp enough edge, honing the knife will actually damage/disturb your edge.

So the question is, should I hone or should I not? Meaning, should I just sharpen my knives on my stone on a regular basis?

If the answer is “yes, hone,” what are your tried-and-true methods/techniques for honing?
