I landed my first Jr Sous Chef position and have been looking at getting a new 240mm. However, after going through a few knives and selling them for less than i bought them I can't justify it, as no stores allow refunds so I end up selling a new knife for less than I bought it. My Mac MTH80 8" has served me fine for 5 years. So i'm looking toward better stones. Right now I'm rocking a Togiharu Two-Sided Sharpening Stone - #1000 & #4000 and it has started to form some micro cracks and I think there are probably better stones out there anyways.
Thoughts? What stones/sharpening materials would you get to maintain your knife for under $250?
