1 for 2 on these bad bois. 14 hours of the standard procedure on the smoker @225, Wrapped at 160 with butcher paper, pulled, & 4 hours of rest wrapped in the warmer @ 150..
My first was dry as hell. I over trimmed, which I believe is a common mistake. I ONLY trimmed the super hard fat on this one. Bark was meh to ok, but I wasn’t going to risk drying it out again. This was a 17lb prime cut from Costco on sale for 3.29/lb!
I’ll roast you doing the cringey squeezing but other than that it looks good to me
