For sure! This makes 6 jumbo
30g raisins 40g dried cranberries 110g AP flour 115g WW flour 215g brown sugar 2 teaspoons baking soda 2 teaspoons cinnamon 1/2 teaspoon ginger 1/2 teaspoon salt 200g finely shredded carrots 200 g Granny Smith apple, finely shredded 50g chopped walnuts or nut of choice 40g sunflower seeds 50g oats 3 large eggs 130g vegetable oil 50g water 2 teaspoons vanilla extract
-soak raisins and cranberries in hot water for about 10 min -cream veg oil, sugar, vanilla, water. Add carrots, apples, nuts, sunflower seeds. stir well. -whisk dry ingredients together and add to wet mixture. Mix until thoroughly combined. -Drain raisins and cranberries and add. Stir until incorporated. It will look like vomit 😂😂 scoop into lined muffin tins about 3/4 full. Sprinkle oats on top.
