Question on ginger

Hey folks, a hopefully simple question for you all. I rather like ginger kombucha, but peeling and slicing up ginger root is kind of annoying.
If you make ginger kombucha, what's your process? Is peeling necessary? Can I just use store-bought minced ginger the same as a ginger root?
