1F is not as acidic and sweet after 10 days as it was in previous batch of just 7 days

I used a bit less sugar this time. Is that the reason? So should I put more sugar in for it to turn acidic, before bottling for 2F?
Or should I just put that extra sugar in 2F now?
Is 10 days enough? Previous batch was 7 days long and enough acidic and sweet.
