Putting meat back in the oven after it's been sliced?

So I've noticed that a lot of times, specifically with the wellingtons, they've started slicing them, realized they were under, and have put them back together and back I'm the oven. Does this actually work? I always assumed if you slice meat and then put it back in that all the juices would run out and it would end up going dry.

In season 18 I’ve seen Gordon re-cook lamb after slicing it and finding it was raw on the inside.
