Why do the chefs not know how to cook meat?

Post Body
It's hilarious to watch every season of "Hell's Kitchen" and see contestants proclaiming they're die-hard fans of the show, only to enter the kitchen and act like they've never seen an episode. You'd think with all that fandom, they'd have mastered cooking meat properly and navigating a high-pressure kitchen. Instead, it's like they're meeting a seared scallop for the first time! The cognitive dissonance is real, and the entertainment value is priceless.
