Sides in Hell's Kitchen

Two instances that I think about with Hell's Kitchen are when Vinny (S8) "highly recommended" that customers do not order sides because of his lack of faith in Raj and when Chino (S9) was assigned to be an assistant on the waitstaff on Family Night and Gordon asked him if he offered the kids sides with their cheeseburgers.

Maybe Gordon's doing this to mess with the chefs, or maybe it just doesn't make the TV cut, but I can't remember a single instance of a guest at Hell's Kitchen making a substitution on a dish. We've seen moments when customers requested salmon well done or a Wellington medium, but I don't recall any times when there was a substitution on the garnish station. This doesn't apply to customers requesting a lobster risotto vegetarian because they don't want the lobster in it. I'm referring specifically to instances that would change the garnish that comes with a dish altogether.

Hell's Kitchen, and other fine dining restaurants, doesn't particularly strike me as a place you can go and make subs if you don't like green beans with your salmon, for example. It strikes me as a place where the menu is the menu and that's that. So, with that in mind, how was Chino supposed to know he should offer side items with a kid's cheeseburger? It makes sense that he'd think the fries/sides would just come with the burger. On the other hand, why would Vinny think that no one would notice when tickets came into the kitchen requesting no side items? It's a very random question, but it was on my mind lol
