Hey guys!
I finished my apprenticeship last year and have been hired full time as a CDP and Iām now in the process of writing menu after menu and costing each once as a learning exercise, but also in the hope that Chef will use a couple of the dishes, if not all of them when it comes time to change the menu in a month or so!
So I was just wondering if anyone had any great websites or books they specifically use when in a bind that leans more towards restaurant cooking rather than home cooking. Iām not out here trying to copy full recipes but I need some help as trying to come up with more out there things is proving to be more difficult than I expected!
Any other tips or tricks would be super appreciated too!
