Fried chicken conundrum

What is the best way or most practical way to fry chicken at a fast casual sandwich shop? In the past I have tried breading and then freezing the chicken but it takes so long to fry from raw and frozen. I have also tried par frying and then freezing which was easier but I was curious if there is a better way? Breading and frying the chicken to order just wouldn’t work with our tiny kitchen. Any advice would be appreciated!
