What should I expect from a bench test as a pastry cook?

I just interviewed for a job as a pastry cook today and the hiring manager said that if I make it through the first round, the second interview would include a bench test.
I have never done a bench test before. What should I expect? Do you have any tips on how I can do well? Thanks.
