Is it possible to get approved for an auto loan with decent credit but low income?

Long story short, my fiance and I have been trying to get a new car. I have the better credit score between the two of us (670-700ish). However, I am mainly a stay at home parent while my fiance makes most of our income as a tattoo artist. He is a newly established artist so we haven't had a long period of time to track his income the correct way. I work 2 days out of the week as a waitress, so on top of server wages and only 2 days, my proof of income looks like nothing. We tried 2 different car lots and did not get approved for any loan. We even offered to put 3k down. Still nothing. Is it possible to get approved for anything in this scenario or will I just have to work more to have better proof of income?
