Safety Signals with a gag/hands tied?

My partner and I only recently started doing a bit of bondage stuff together, and we’ve been very careful about making sure everything is safe. My partner usually subs, but the cutoff between pleasurable overstimulation and panic-inducing overstimulation can be very sharp for us. We both want to spice things up a bit more, but we haven’t found a solution for what sort of signal to use as a safe signal in situations where is she unable to talk and can’t use her hands. Any suggestions?
