First time London Broil and old school probe thermometer, help me not screw this up!

Okay, after some reading I want to marinate this thing ~24 hours, then broil it approx 6 minutes on each side, or when the internal heat reaches 135F, take it off the heat, let it cook internally to 140F, then rest at least 10 minutes. If there are any mistakes here, let me know!
I also am not sure when is best to use the probe thermometer. I don't want to stab repeatedly, so should I cook the whole thing with the thermometer in, or only probe once near the end of cooking based on my own judgement? I don't want to lose unnecessary juices.
