I tried making some for the first time tonight, and it turned out pretty fantastic. However towards the end it did went from perfectly creamy to slightly grainy. Now never having made any dulce de leche before I am unsure what happened. If I had to guess I would think some kind of protein interaction but I have no clue for sure. How do I stop this from happening?
TL;DR It became grainy at the end of cooking, how do I stop that from happening?
-edit- It did not become grainy while cooling, it became grainy while heating up.
