Iā€™m planning to cook leeks sous vide following techniques Iā€™m seeing in Modernist Cuisine and a couple other sources. The instructions are to top/tail them and use the white part of the leek, but without slicing/halving them.

The leeks are pretty dirty straight from the grocery store. Is there a technique to clean them without slicing them lengthwise?
