This is not a request for equipment recommendations, I just want to know if it is safe or not. I have searched /r/askculinary and /r/pressurecooking and neither turned up similar questions.
I am in the market for a pressure cooker and I am on the fence between stovetop or electric. My problem is that I have a flat top electric stove, which are notoriously finicky when it comes to pressure cooking. I also like the idea of having an electric appliance that runs itself.
However, I've seen several recipes that mention swirling the pressure cooker at some point to move food around and prevent burning. The two recipes that come immediately to mind are Modernist Cuisine's recipe for caramelized carrot soup, and chef step's gluten free carrot cake. Is it safe to try and swirl an electric pressure cooker?
