Substituting pumpkin for sweet potato in sweet potato casserole?
Post Body

I always cook and use my Halloween pumpkins. I know the smaller pie pumpkins are preferable but have never had an issue with it and I hate to waste it. But I always have a whole lot of cooked pumpkin and limited ways to use it. I was wondering if I drained it well, would it be possible to sub pumpkin for the sweet potato in a casserole like this one:

Or, has anyone ever done anything similar and, if so, what were the results?

Thanks in advance!
