Duck Fat Rendering - Please Help
Post Body
Ok, so I just vertically roasted a duck and it came out then I strained the fat but I have two distinct colors even after i strained it twice through cheesecloth. I'm hoping to save the duck fat to use but I'm questioning if I should try to still separate out the darker color from the lighter. Are they both fat? Do I need to separate them? If so how could I do that if they are both liquid? Picture to help
