Trying to make one of those watermelon fruit salad jello molds. I brought to a simmer 4 cups of a watermelon juice and stirred in 8 packs of plain Gelatine in 1 cup of juice set aside. My 1 cup got pasty obviously so I decided to add some of the hot WM juice to loosen it up. Then after the WM juice got to a full simmer I poured the juice over the gelatin juice in a large bowl and stirred. I decided to let the hot mix stand for a while because I was unsure what the heat would do the fruit in the WM Rind. I did skim off some of those bubbles on top. I tried researching before this, but I couldn't find much on how fresh juice would react to fruit in a mold when used for Jello. Its been close to 24hrs and its still liquid.
I used Pineapple, Mango, Strawberries, Kiwi, Tangerines and Maraschino cherries. This is a for a tiki-phile get together so I wanted to use fruit that are more representative of the fruit we use in tiki drinks. I figured my fruit of choice have more moisture that another salad may have and thought Id trust the process. Any advice on how to fix this? do I need to pour out the juice and add more gelatin?
