Why did the water in my can of soy beans turn to jelly?

I opened a can of soy beans and the water has completely solidified, it has become one big chunk. It is not like regular bean water where it just is a tad slimy, it is like aspic! They are quite hard to rinse free of gel after spooning them out of the can. Is this due to something like pectin in the beans or storage temperature? The can was not dented or otherwise sealed improperly, so I surmise the beans have reacted with the water somehow?
