Why is the new fryer oil boiling over?

Last night the fryer oil was changed while I was away and now when I turn it on it almost immediately starts boiling before getting violent. I managed to turn it off before it truly boiled over and havenโt used it since.
Why is it doing this? What can I do to fix it?
(The fryer is kept at 375 and is used for fries, tots, and wings.)
