Purple sweet potatoes
Post Body
Ive used purple sweet potatoes, but usually end up searing them like lyonnaise without the onions. I have made a sweet potato mash that works really well but the same measurments dont work out and it seizes up too much due to the starch. How can i make a smooth purple sweet potato that wont seize on me? My ratio is 10/1 (lbs) sweets to butter.
