Hi all!
First off, I hope this isn't breaking any rules as I've looked through all of them... It's not a recipe request nor is it a c00k b00k question, but is my attempt at identifying an unidentifiable ingredient in a book. I would ask in r/cooking but this is highly specific so I feel like it'd be best here. But let me know if it should be elsewhere.
Anyway, I have the Eleven Madison Park book and am looking at the first recipe. The one problem is that there is an ingredient I cannot identify and I also cannot find any information on it on Google. The ingredient is "black cocoa replacer."
To help, it is being used to make a black glaze for a Black and White Cookie where you melt cocoa butter and add the "black cocoa replacer" and salt, eventually adding butter via an immersion blender to emulsify. Is black cocoa replacer just the same as black cocoa powder? If so, it seems like an odd way to name it!
