What's an additive to stop cold food melting on hot food.

I'm sure I've read about such a thing, but I'm trying to pipe whipped creme fraiche on top a hot deep fried potato. Obviously I could leave the potato a while so it wasn't straight out of the fryer, but is there something I can add to the creme fraiche to help stop it melting?
