I have recently been getting more serious about my cooking and am getting away from non stick. I was using a Calphalon Select (cheap target brand Calphalon) non stick "jumbo fryer pan". Essentially a 12" skillet with high sides.
I really dig the high sides for the versatility and being able to toss food a bit more easily. It is also immensely helpful for things with a fair amount of liquids and sauces cooking into them. I came across the All Clad D3 weeknight pan, which is a 4qt pan almost the exact same shape and dimensions as my long used Calphalon non stick. I am loving it so far.
The problem I'm having, is that I am looking for a smaller version of it more or less. I have a 10" regular stainless skillet I have been using for smaller batch stuff, but I still really miss having the higher sides. That being said, I don't think I'm looking for a saute pan, as I don't want the purely vertical sides. But I don't know enough about what I'm talking about to know the correct terms for things.
Is "high walled skillet" even a real thing? Am I looking for a saucier? I have no idea. In a 10" or so type size. If anyone could point me in a direction of what type of pan I'm really looking for or a good one they know of, I would greatly appreciate it.
