Homemade marshmallows for toasting. Help needed.
Post Body

Made a first batch of marshmallows a few days ago with a fairly standard recipe (king arthur), cut them up, tossed them with a cornstarch and powdered sugar mix. Nothing fancy.

This evening I tried toasting them on sticks after a bbq. The taste was great but they were so soft they melted right off the sticks.

How would I adjust a recipe to make good toasting marshmallows? More gelatin? Heat the sugar syrup to a firm ball (or even hard ball) syrup? Something else?
