I have a meal kit that asks me to mix mayo with a spice blend, coat the chicken in it, then coat in a cornmeal crumb mix. Mayonnaise makes me gag, but I'm not sure what else exactly might work in it's place.
I'm guessing the mayo acts as both a crisping agent due to the oil, but also a sticking/binding agent due to the eggs and other stuff. So like, if I coat the chicken in oil then the crumbs, the crumbs would crisp up but slide off. If I coat it with eggs, the coating would stick but be soggy.
I'm not sure what to substitute.
