I was trying to make candied orange peels (with the fruit mixed in) and somehow i ended up with a preserve like jelly
Post Body

I washed the orange peels (with pith cause its not bitter) a few times, then i added the fruit and sugar, then boiled it doiwn into a thick syrup, then i took it all out of the pot and put it in the freezer together in a square pan, after about 20 minutes. I got it all out and looked at it, it looked like a clear piece of candied fruits so i touched it and to my horror it was a jelly, so jelly like in fact it could be easily spread on toast. It aldo tasted almost exactly like orange preserves.

How did this happen? I was trying to candy it and i got myself a jar of orange preserves. Any explanation.
