Is Chinese Kale harder to chew, merely because it's thicker, than Choy Sum?

Chinese restaurant staff advise that 菜心 (Choi Sum) is easier on the teeth and to chew, because it's lankier than 芥蘭 (Chinese Kale = Gai Lan). Is this advice scientifically substantiated?
