My brother-in-law and I came up with this idea. What if we were to make a ginger bug, and then boil it up with some Yerba mate, how close could we get to Guayaki?
So we followed our instincts, and then it was super strong, so I grabbed some ginger lime mule Selzer from polar, and I cannot even tell you how good this tastes. The sugar having eaten the yeast from the organic ginger keeps it bubbling in fermenting as it sits in sealed bottles, and that added seltzer, gives it a little bit of a zing and a relief from the strong Yerba taste.
I must admit, I think I would probably use a little bit less Yerba next time. As it was, I used, Cruz y Malta, not Rosamonte.
Itβs quite the beverage, and I like it. Any of you ever do anything like this? With a ginger bug I mean? Cheers to everyone.
Keep working on that, the world need more mate-based drink. I also am working on something mate based to distribute in the italian market this year!
