Hi everyone, by request, I'm posting a January meal plan thread. Post your meal plans and most commonly used recipes for the month for others to use as inspiration for February! There are only a two rules for this thread:
Include a short description of your meal plan, recipes. For example, mine would be: 1200-1400 cal/day, bulk recipes, cheap. This gives everyone an idea of what kind of meals are included. A meal plan for someone eating a vegetarian 1800 cal meal plan is very different that a 1200 cal one that includes meat.

This is a sample meal plan created by me using the recipes I used this month. (Calendar from elli.com, not made by me. Also, ignore typos...) Below you will find links to all of the recipes. Some of the recipes are from websites you most likely already know about and some of them are things I put together myself. Unfortunately, I don't have carb counts for anything, but I'm pretty sure most of them are under 7 net carbs.
I didn't include breakfast because it is usually one of these: eggs beef bacon for weekends, protein shake hazelnuts raspberries for long class days or hazelnuts raspberries for work days when I eat lunch much earlier.
Recipes:
Meatsauce and zucchini noodles: Find a spaghetti sauce lowest in carbs, 1lb ground beef. Make meatsauce. Use a julienne peeler to make noodles from zucchini and cook in microwave for 30 sec. If packing for lunches, don't pre-cook the noodles. They will cook when you heat the meatsauce.
Garlic shrimp and chicken with broccoli: I used Trader Joe's garlic sauce and just let the squared chicken thighs simmer in the sauce. Add the shrimp towards the end of cooking.
Spicy eggs: Pretty simple. Scrambled eggs, cayenne pepper, paprika, hot sauce, salt and pepper
Stir fry: I just combine all the ingredients in a wok after cooking the chicken and noodles separately in some soy sauce and chili pepper sauce. Stir fry recipes are pretty easy to make keto friendly, so there are a ton of recipes out there!
Chicken curry and cauliflower rice I use half a jar or less of a lower-carb curry sauce. I usually add chili powder and paprika for extra spice. I combine the sauce coconut milk chicken thighs in a large pan with a lid. The rest of the instructions should be on the jar.
Lazy keto chicken: Only thing I changed was portion sizes to lower calories.
Taco salad: This was my go-to lunch even before keto. Taco seasoning packet (just a tsp or two), ground beef, 1/4 avacado, chopped romaine lettuce, cheese and a tbsp of sour cream.
Garlic chicken: Cooked with a bit of the TJ's garlic sauce in a pan and parmesan cheese.
Kung pao meatballs: In my local grocery store I found a "kung pao" sauce in the Asian isle, but I'm sure you could use any spicy low-carb sauce and meatball recipe.
Pizza stew: I found this recipe in a keto comment, but I couldn't find the original! I just use a casserole dish and combine these ingredients at 400 for about 15 minutes: 1lb cooked ground beef, 1 cup pizza sauce, black olives, cheese, pepperonis, garlic, onions and sometimes squash.
Keto pizza: Any kind of keto pizza. I usually just use a low-carb tortilla pizza toppings.
Spicy chicken tenders: I don't use a specific recipe, but there are a ton of pork rind chicken recipes on /r/ketorecipes. I use Frank's buffalo sauce as a dipping sauce.
Mushroom/spicy burger: Just ground beef, spices and mushrooms or jalapenos.
And finally, my new favorite hot chocolate! I picked up the Swiss Miss diet hot chocolate and added a bit of heavy cream, whipped that with an aerolatte then mixed in a cup of almond milk. Tastes just like the "real" thing!
