This has been answered. Thank you for the comments. I was under the impression that XBMCbuntu was their "appliance version" because of information like this in the wiki:
XBMCbuntu is a boot-USB drive/LiveCD image with XBMC pre-configured to work directly out-of-the-box for a dedicated set-top-box style installation of XBMC.
The documentation should be changed to reflect that the XBMCbuntu version is made to be on par with other XBMC separate OS combos, and that OpenELEC should be used for "appliance like" scenarios more applicable to the average consumer.
