Writers who've been working on the same project for several years or more. What have you learned?

I've got two projects in my mind: A urban fantasy novel incorporating my interpretation of God, the Devil, and all the other mythological stuff from the Bible (similar to Constantine). The other project is a typical epic fantasy sort of thing that's too big to work on right now. As I begin to tackle project number one, I'm reminded of the skill it takes to write well. I'm reading American Gods as an example of what to aim to, and the learning curve is pretty frightening. I'm all about self teaching. I'm not taking English or Journalism degrees, I don't have the time or the grades for that... So writing book by writing book, I'm guessing it's going to take 3 - 6 years to write something sellable. Something with ten to fifteen drafts. Something someone's going to truly love. Anyone feel the same? Anyone on a project that's been their blood, sweat, and tears for ages? If so, share what you've learned!
