Autistic Gamer - Super Overwhelmed

Hi everyone. As the title says, I have Autism and that sometimes makes gaming a challenge for me. I am a returning player but it has been so long that I basically feel like I'm new to the game.

I got access to the Dragonflight beta and so I made a dragon character, loaded into the game, and WOW. I had no idea where I was, where I was supposed to go. My action bar was full of spells I had no idea how to use. My bag had a ton of items I was unfamiliar with.

So I immediately logged onto normal retail and started a fresh character. Which felt a lot better, but now I'm wondering - will I be better off leveling a character from scratch, or (if I choose to buy Dragonflight - I have not yet), should I pay for a boost and go from there?

I'm concerned that if I buy a boost, I'll be just as overwhelmed as I was in the beta. On the other hand, it seems like it will take ages to level up from scratch because I'm a very casual, very slow gamer.

I think it may be important to note that I don't feel the need to make a dragon character, I'd be fine with another race. I feel like that could simplify things a bit.

Just looking for feedback on which option you feel might be better for someone easily overwhelmed - leveling from scratch, or getting a boost to be able to access the new content? Also if anyone has any leveling tips I would love to hear them!
