Spice in your world's cuisines?

I'm curious about spice levels, chiles (or alternatives), and related aspects of cuisines in other people's worlds. Feel free to answer any or all of the questions below:

  • How would you rank your world's cuisines in terms of spiciness? Do you use something like the Scoville scale to rank them, do you mainly compare them to real-world cuisines, or do you have another ranking system?
  • Why, if at all, do people in your world enjoy spicy dishes? Is there any history behind the adoption/addition of spice to your world's cuisines? (Real world reasons include, but are not limited to, the dopamine and endorphins released from capsaicin consumption.)
  • What are your world's sources of spice? Does it have capsicum chili peppers or an equivalent plant with high capsaicin content, an alternative like the Sichuan peppercorn, or something wildly different? Whatever this is, how is it prepared/eaten?
