Bowties on top?

Why are bowties put on the top?
I guess it makes sense for larger gaps but it seems like you could more easily put them on the bottom of the piece so u do t have to be as careful.
Also wouldn't flat L brackets screwed into the bottom serve the same purpose and be a lot easier? (In cases they wouldn't be visible from the top)
