Best way to seal log rounds

I have a few center peices I made for my wedding and I'm also working on a few coasters( different project).
Should I use epoxy? And if so can u put it on wirh a paint brush?
I've seen people just pour it on and then router it off I don't have a track to router tho.
Any recommendations would be great
