I'm an older gamer, just started Witcher III. Feeling overwhelmed. Is there a beginner's guide anywhere?

I've read through all the tutorials and everything, but there's just so much to remember. I find combat difficult a bit. Gotta worry about sidestepping, dodging, parrying, plus the additional magic you can do.

Then there is alchemy and crafting, and all the mats required. Not sure where to go to get the mats if you can't buy them, other than the plants around. There is so much random stuff I've collected but not sure if I should hang on to it all, sell it, or dismantle it.

Mainly I'm just looking for some general information that tutorials may/may not have gone over so I can drill it in my old brain.
